Brief
Firstly, to identify a supplier of Scottish salmon for sushi. Secondly, to help the American-based client promote the product to discerning sushi bars, restaurants and hotels in Japan.

Key Tasks
To work closely with the Japanese managing director based in New York and the chosen supplier in Scotland, to produce an appropriate product for sushi. Help to organise and attend food promotions throughout Japan, to promote the International Food Buyers Association, which sources quality food and drink from all over the world, to sell directly to the top quality end of the food service sector in Japan.

Outcomes
The organisation managed to recruit over 200 buyers in year one, with the salmon sushi being the first pilot product.
